Ingredients

  • FISH:
  • 2 tablespoons lime juice, freshly squeezed
  • 2 tablespoons olive oil, plus more for cooking
  • 3 tablespoons cilantro, minced
  • 1/4 teaspoon cumin
  • 2 cloves garlic, minced or pressed
  • coarse salt and ground pepper to taste
  • 1 1/2 pounds white fish, halibut, or tilapia
  • SALSA:
  • 2 mangos, pitted, peeled and diced
  • 1/3 cup red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1 tablespoon cilantro, minced
  • 1 tablespoon of lime juice, freshly squeezed
  • pinch of coarse salt
  • SAUCE:
  • 1 avocado, split and pitted
  • 1/2 cup low-fat greek yogurt
  • 1 clove garlic, minced or pressed
  • coarse salt and ground pepper to taste

Preparation

Step 1

To make the marinade, combine the lime juice, olive oil, cilantro, cumin, and garlic in a shallwow dish. Season with salt and pepper to taste. Whisk it together, add fish and coat both sides. Cover and put in refrigerator for 30 minuted.

To make the salsa, comnbine all the ingredients in a bowl and toss until evenly mixed.

To make the sauce, combine all the ingredients in a blender. Blend until smooth and then add salt and pepper to taste.

After fish has marinated, take it out, put some olive oil in a medium nonstick pan. Add fish and cook until fish is lite and flakey. Then serve fish in tacos with salsa and sauce.
