Spinach Stuffed Peppers

Ingredients

  • 3 medium red, yellow green or orange peppers
  • 1 bag spinach,cooked and drained
  • 1/2 cup parmsan cheese
  • 2 3 ounce package cream cheese, softened
  • 1/4 cup soft bread crumbs
  • 1 egg, beaten
  • 1/4 teaspoon slt
  • 1/8 teaspoon pepper
  • 1 1/2 teaspoon olive oil

Preparation

Step 1

Trim stems from peppers. Cut peppers in half and remove seeds. Cover the peppers with boiling water and cook 3 minutes, then drain.
Set aside 2 tablespoons parmesan cheese. Combine remaining parmesan cheese, spinach, cream cheese, bread crumbs egg, slt and pepper and mix well.
Fill the peppers and place in a shallow baking dish.Sprinkle remaaing cheese on top and drizzle with olive oil.
Bake at350 for 35 minutes.
