Directions
1- Wash potatoes (3-4) and slice. No need to peel. (Note: I first tried slicing them with a food processor, but they were too thin and burned easily, so just slice them with a knife.)
2- Cover a cookie sheet with foil for easy clean up. Spray with non-stick cooking spray or lightly grease with olive or coconut oil.
3 – Lay slices flat with none of them overlapping. Place any thicker slices toward the edge of the cookie sheet.
4- Sprinkle with desired seasoning. (See ideas above, or make up your own.)
5- Bake at 350 for 30-40 minutes, watching closely. The time will vary based on thickness. Once they are done, the edges burn easily. If you want them extra crispy, turn them over halfway through.
6- Cool slightly and serve immediately. They tend to soften after sitting for a while, so it’s best to eat them shortly after baking.
