Ingredients
- SHRIMP
- 2 cups vegetable oil
- 1 cup panko bread crumbs
- 1 cup unsweetened shredded coconut
- 1 lb shrimp
- kosher salt
- fresh ground pepper
- 1/2 cup flour
- 2 large eggs beaten
- DIPPING SAUCE
- orange marmalade
- spicy brown mustard
- horseradish
- honey
Preparation
Step 1
-Heat vegetable oil in dutch oven over medium high heat.
-In a large bowl, combine panko bread crumbs and shredded coconut, put aside.
-Season shrimp with salt and pepper. One at a time dredge shrimp in the flour, dip in eggs, dredge in coconut mixture pressing to coat.
-Working in batches, add shrimp to dutch oven and fry until golden brown and crispy, about 2-3 minutes.
