Basic Chicken Salad

This is my basic recipe. Feel free to add grapes, walnuts or whatever sounds good! I make this with leftover grilled chicken. I add celery if I have it on hand. If you like it a little dryer, cut back on the mayonnaise and sour cream.

Ingredients

  • 1 1/2 cups chopped cooked chicken
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/8 teaspoon Dijon mustard
  • pinch of curry powder
  • salt and pepper to taste
  • optional
  • 1 medium celery stalk, chopped (1/2 cup)
  • 1/2 cup quartered red or green grapes
  • 1/2 cup diced celery
  • 1/4 cup chopped walnuts (I prefer toasted)
  • paprika

Step 1

In medium bowl, mix all ingredients. Serve as a sandwich or on a bed of lettuce with crackers.
