Ingredients
- 2 squirts cooking spray
- 2 tsp. olive oil
- 1 1 large sweet yellow and 1 red bell pepper chopped
- 28 oz. can diced plum tomatoes with juice
- 1 small yellow onion chopped
- 1/4 cup chopped flat leaf parsley
- 3 cloves minced garlic
- 1 1/2 tsp. dried or 1 tsp. fresh Basil
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 12 oz. rigatoni cooked and kept hot
- 3 Tbsp. grated Parmesan

Preparation
Step 1
Coat pan with spray oil; add olive oil and heat on medium high. Add peppers and salute until slightly tender. Cover pan and cook until softened `3 min. Add tomatoes, onion, parsley, garlic, and basil; stir and increase heat to boiling. Reduce heat to medium low and simmer, uncovered until most of liquid has evaporated ` 10 min.
Serve sauce over pasta. Sprinkle with cheese.
