Ingredients

  • 2 squirts cooking spray
  • 2 tsp. olive oil
  • 1 1 large sweet yellow and 1 red bell pepper chopped
  • 28 oz. can diced plum tomatoes with juice
  • 1 small yellow onion chopped
  • 1/4 cup chopped flat leaf parsley
  • 3 cloves minced garlic
  • 1 1/2 tsp. dried or 1 tsp. fresh Basil
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 12 oz. rigatoni cooked and kept hot
  • 3 Tbsp. grated Parmesan

Preparation

Step 1

Coat pan with spray oil; add olive oil and heat on medium high. Add peppers and salute until slightly tender. Cover pan and cook until softened `3 min. Add tomatoes, onion, parsley, garlic, and basil; stir and increase heat to boiling. Reduce heat to medium low and simmer, uncovered until most of liquid has evaporated ` 10 min.
Serve sauce over pasta. Sprinkle with cheese.
