Lentil Soup

This is the recipe for Carrabba's Italian Sausage Lentil Soup

Ingredients

• 1 lb hot Italian sausage
• 1 onion chopped
• 1 stalk celery
• 1 large carrot
• 1 small zucchini
• 3 cans chicken broth
• 1 14-1/2 oz can diced tomatoes (do not drain)
• 1 C dry lentils
• 1 t black pepper
• 1 t oregano
• 1 t red pepper flakes
• 1 t basil
• 1 t parsley
• 1 t thyme
• 1 t Italian herbs

Preparation

Step 1

Brown sausage and drain off fat.
In large pot add all ingredients and bring to boil. Simmer for 1 hour or until lentils are tender. Sprinkle with parm. cheese and serve with Texas toast, crusty Italian bread or rolls.
