Ingredients
- 1 lb hot Italian sausage
- 1 onion chopped
- 1 stalk celery
- 1 large carrot
- 1 small zucchini
- 3 cans chicken broth
- 1 14-1/2 oz can diced tomatoes (do not drain)
- 1 C dry lentils
- 1 t black pepper
- 1 t oregano
- 1 t red pepper flakes
- 1 t basil
- 1 t parsley
- 1 t thyme
- 1 t Italian herbs

Step 1
Brown sausage and drain off fat.
In large pot add all ingredients and bring to boil. Simmer for 1 hour or until lentils are tender. Sprinkle with parm. cheese and serve with Texas toast, crusty Italian bread or rolls.
