Puerto Rican Style Pasta Salad

Ingredients

  • 8 oz. Penne pasta
  • 1 tablespoon of white vinegar
  • 2 tablespoon of mustard
  • 1/2 teaspoon of the Spanish olive liquid
  • 2 cups of mayonnaise
  • 1 teaspoon of oregano
  • 1/2 garlic powder
  • 10 Spanish olives sliced
  • 1 carrot shredded
  • salt and pepper to taste
  • 3 hard boiled eggs

Preparation

Step 1

Cook your pasta according to the instructions on the box.

Boil 3 eggs.

While your pasta is cooking in s small bowl mix together your white vinegar, mustard, olive liquid, oregano, garlic powder, and mayonnaise.

Once your pasta is done cooking, drain and rinse under cold water. You want your pasta cooled off before mixing everything together.

Add cooled pasta to a large bowl and pour your liquid mixture on your pasta.

Now add your diced olives, shredded carrot, salt, and pepper. Gently mix and coat everything together.

Lay diced hard boiled eggs right on top of the pasta salad.
