Italian Chicken Casserole

Ingredients

  • 4 chicken breast halves
  • 1 cup uncooked long grain rice
  • 1 envelope ( .65 ounces ) Italian salad dressing mix
  • 2 1/2 cups boiling water
  • 1 can ( 10 3/4 ounces ) condensed cream of chicken soup
  • Salt and Pepper

Preparation

Step 1

Preheat oven to 350 .
1. Spread rice in a sprayed 13x9 inch baking dish. Combine salad dressing mix, water and soup; mix well. Pour over rice. Place chicken, skin side up, on top of rice. Sprinkle with salt and pepper. Cover dish with foil, and bake 60 minutes.
2. Remove foil and bake 20 to 30 minutes or until liquid is absorbed and chicken is tender. Makes 4 servings
