Salmon Fillets Roasted in Butter

Ingredients
- 2 T butter
- 2 T extra-virgin olive oil
- 1/2 t salt
- 1 1/2 lb salmon fillets, in 1 or 2 pieces, 1 1/4 to 1 1/2" thick at the thickest point, skin on or off, rinsed and patted dry
- salt
- ground black pepper
- minced fresh parsley

Preparation
Step 1
Preheat oven to 500. Heat in a small saucepan over medium-low heat until butter is melted: butter, oil and salt.
Spread 1/2 of the butter mixture over the bottom of a shallow roasting pan. Place in the pan, skin side up: salmon
Sprinkle with: salt and pepper to taste
Drizzle the remaining butter mixture over the fish. Roast for 5 minutes and carefully turn the fish. Roast until the interior is nearly but not completely opaque, about 5 minutes more. Remove the salmon to a platter and pour all the pan juices over it. Garnish with parsley.
