Ingredients
- 1 Tbsp. fennel seeds
- 2 cloves garlic, minced
- 4 Tbsp. olive oil
- kosher salt & pepper
- 2 lbs. boneless pork loin
- 2 red onions, quartered
- 1 lb. small potatoes quartered
- 3 firm pears e.g. Bartlett, cored & peeled

Step 1
Heat Oven to 400F
2. Crush fennel seeds. Add garlic, 2 Tbsp. oil, 1 tsp. salt, 1/4 tsp. pepper. Rub the mixture over pork, then place in large roasting pan.
3. Mix onions, potatoes, pears, 1 tsp. salt, 1/4 tsp. pepper, and the remaining oil. Scatter around pork and roast until cooked through - about 70min.(internal temp 150F)
4. Transfer pork to cutting board and let rest 5 minutes before slicing.
