Ingredients

    Tbsp. fennel seeds

  • 2

    cloves garlic, minced

  • 4

    Tbsp. olive oil

  • kosher salt & pepper

  • 2

    lbs. boneless pork loin

  • 2

    red onions, quartered

  • 1

    lb. small potatoes quartered

  • 3

    firm pears e.g. Bartlett, cored & peeled

Directions

Heat Oven to 400F 2. Crush fennel seeds. Add garlic, 2 Tbsp. oil, 1 tsp. salt, 1/4 tsp. pepper. Rub the mixture over pork, then place in large roasting pan. 3. Mix onions, potatoes, pears, 1 tsp. salt, 1/4 tsp. pepper, and the remaining oil. Scatter around pork and roast until cooked through - about 70min.(internal temp 150F) 4. Transfer pork to cutting board and let rest 5 minutes before slicing.
