Ingredients

  • 1 clove garlic, finely chopped
  • 1 teaspoon olive oil
  • 1 bunch fresh parsley
  • 1 tablespoon Grana Padano cheese, finely grated
  • 1 cup French fries (we prefer a medium cut skin-on style)
  • Canola oil (enough for deep-frying)
  • 3 teaspoons garlic oil
  • Pink Himalayan sea salt, to taste

Preparation

In a sauté pan, heat olive oil on medium-high, add chopped garlic, and cook for 1-2 minutes. The garlic should still be firm, sautéed just enough to remove some of the bitterness.

Hold the base of the parsley bunch & use a chef’s knife to shave the leaves off the stems. Chop to a medium/fine consistency.

Deep-fry the French fries in canola oil at 325 degrees Fahrenheit for 5 minutes. Remove from oil and let dry on a paper towel. Fry a second time at 375 degrees Fahrenheit until crispy.

Combine 1 teaspoon of garlic oil with the sautéed garlic in the bottom of a metal bowl. Add crisp French fries and drizzle with remaining garlic oil, 1 tablespoon of chopped parsley, and Grana Padano. Sprinkle with pink Himalayan sea salt to taste. Gently toss the fries in the mixture until evenly coated.

Plate & top with any ingredients left in the bowl.
