Ingredients

  • 3

    eggs

  • 1 1/2

    c sugar

  • 1/2

    c vegetable oil

  • 1

    c buttermilk

  • 1

    c cooked and mashed prunes

  • 1

    t vanilla

  • 2

    c flour

  • 1

    t baking powder

  • 1

    t baking soda

  • 1

    t cinnamon

  • 1

    t nutmeg

  • 1

    t allspice

Directions

To prepare the prunes, place in a glass measuring cup and cover with water. Microwave 3 minutes. Drain and rinse with cold water to cool. Run through food processor until they are a smooth paste. Then proceed with the recipe. Mix wet ingredients in mixer and blend well. Add sifted dry ingredients alternately with buttermilk. Beat well. Pour into a greased 9x13 pan. Bake 350 for 40-50 minutes. Mine took 35. Do a toothpick test. Glaze: 1 1/2 sticks butter 1 1/2 c sugar 3/4 c buttermilk 2 T white corn syrup 1 t vanilla Place all ingredients in deep sauce pan and stir over medium low heat just until it begins to boil. Remove from heat and add 1 t of baking soda. Stir until dissolved and foamy. Pour slowly over hot cake until absorbed.
