Ingredients
- 1 c mashed ripe bananas (about 3 medium), plus 1 ripe banana, halved and sliced lengthwise
- 1 c packed brown sugar
- 1/2 c unsalted butter, melted
- 2 large eggs
- 1/2 c plain Greek yogurt
- 1 tsp pure vanilla extract
- 2 cal all-purpose flour, spooned and leveled
- 1 1/2 tsp baking powder
- 1 tsp kosher salt
- 1/2 tsp baking soda
- 1/2 tsp ground cinnamon
- 1 1/4 c chocolate chunks, divided
Preparation
Step 1
1. Preheat oven to 350F. Grease a 9-by-5-inch loaf pan.
2. Whisk together mashed banana, sugar, butter, eggs, yogurt, and vanilla in a bowl until well combined. Sprinkle flour over banana mixture, then sprinkle flour with baking powder, salt baking soda, and cinnamon. Gently stir until just combined. Fold in 1 c chocolate chunks. Spoon batter into prepared pan. Arrange remaining 1/4 c chocolate chunks and banana slices on top of batter.
3. Bake until a toothpick inserted in center comes out clean, 1 hour to 1 hour 10 min. Cool in pan on a wire rack 20 min, then remove to rack to cool completely.
