Banana Cake

Ingredients

• 1/2 c shortening (Crisco)
• 1 1/2 c sugar
• 2 eggs
• 2 c cake flour
• 1/2 t baking powder
• 1/2 t salt
• 3/4 t baking soda
• 1/2 c buttermilk
• 1 c bananas, mashed
• 1 t vanilla

Preparation

Step 1

Cream: shortening and sugar. Beat in eggs. Sift flour, baking powder, salt, and baking soda. Add alternately with 1/2 c buttermilk and bananas. Add vanilla. Bake in 2 layers (8 x 8) pans at 350 for 30 minutes. Top with whipped cream and sliced bananas or a cream cheese frosting as in carrot cake
