Apricot Sherbet

  • 4 c water
  • 4 c sugar
  • #2 1/2 (29 oz) can of apricots (seedless), save juice
  • 1/2 c and 2 T lemon juice (ReaLemon)
  • 1 1/2 c orange juice
  • 4 egg whites, beaten
  • 1 c whipping cream
  • lemon rind, grated (optional)



Step 1

Boil 10 minutes: water and sugar, then cool.
Sieve apricots, saving juice. Throw away pulp. Add to sugar water.
Add lemon juice and orange juice. Add-fold in beaten egg whites. After 15 minutes of freezing in freezer, add whipping cream. Freeze 5 minutes more. May add grated lemon rind.
