Ingredients
- 2 Lbs. Yellow Squash (about 4 Cups)
- 1/2 Large Onion
- 1 Sleeve Ritz Crackers (about 35 crackers)
- 1 Cup Cheddar Cheese
- 2 Eggs
- 3/4 Cup Milk
- 1/2 Cup Butter, melted
- Salt and Pepper to taste

Step 1
Preheat oven to 400 degrees. Lightly steam squash and onion in a steamer basket for 5 minutes. Drain; set aside. In a medium bowl, combine cracker crumbs and cheese. In a large bowl, add drained squash and onion and gently fold in cracker and cheese mixture. In a small bowl, whisk together eggs and milk then add to squash mixture. Melt 1/2 cup butter. Add half the butter to squash mixture. Season with salt and pepper. Spread squash mixture to a greased 9 x 13 inch baking dish. Top with remaining crackers and pour remaining melted butter over top. Bake at 400 degrees for 25-30 minutes or until golden brown.
