Salmon Croquettes

  • 1 lb cooked or canned salmon
  • 1 1/2 c mashed potatoes
  • 1/4 c heavy cream
  • 1 T chopped fresh parsley
  • 1 t snipped fresh chives
  • 1 t snipped fresh dill
  • 1/4 t ground red pepper
  • salt to taste
  • 2 c fresh breadcrumbs
  • 2 c all-purpose flour
  • 4 large eggs
  • 2 T unsalted butter

Step 1

Combine in a small bowl:
salmon, mashed potatoes, heavy cream, parsley, chives, dill, red pepper and salt.
Spread in separate shallow bowls:
breadcrumbs and flour
Whisk together in a third shallow bowl;
Shape the salmon mixture into 8 patties. Working with 1 patty at a time, coat lightly with the flour and shake off the excess. Dip quickly into the eggs and let excess drip off, then coat with the breadcrumbs. Heat in a large nonstick skillet over medium heat until sizzling:
Add as many of the croquettes as will fit comfortably. Cook until golden on both sides, about 2 minutes each side. Remove and repeat with the remaining croquettes.
