Ingredients

  • 3 eggs
  • 1 c salad oil
  • 2 c sugar
  • 2 t vanilla
  • 2 c grated zucchini
  • 1 can crushed pineapple
  • 3 c flour
  • 2 t baking soda
  • 1 t salt
  • 1/2 t baking powder
  • 1 1/2 t cinnamon
  • 3/4 t nutmeg

Preparation

Step 1

Beat eggs; add salad oil, sugar and vanilla. Beat until thick and foamy. Stir in zucchini and pineapple.
Combine: flour, baking soda, salt, baking powder, cinnamon and nutmeg. Stir flour mixture into zucchini mixture. Put in two greased and floured loaf pans. Bake at 350 for one hour
