Spinach Cottage Cheese Noodle Casserole

  • 12 oz green noodles
  • 2 c sour cream
  • 2 10 oz pkg frozen chopped spinach, cooked
  • 2 c sm. curd cottage cheese
  • 1/4 c lemon juice
  • 2 T instant minced onion
  • 2 t dried dill weed
  • 1 1/2 t garlic salt
  • 2 c shredded mozzarella cheese
  • 1 1/2 c crushed salted tortilla chips



Step 1

Cook noodles in boiling, salted water until tender, but firm, about 6-8 minutes. Drain. Combine noodles and spinach. For sauce, blend together. Cottage cheese and sour cream. Add lemon juice, onion, dill weed and garlic salt. Layer 1/2 noodle-spinach mixture in 13 x 9 baking pan. Spread with 1/2 sauce and sprinkle with 1/2 mozzarella cheese. Repeat. Cover top with tortilla chips. Bake at 350 for 30 minutes
