Ingredients

  • 2 T Butter
  • 1-3 lb. chicken, cut into pieces, skin removed
  • 1 clove garlic, mashed
  • 1 whole onion, chopped
  • 1 1/2 c mushrooms
  • 1/3 c lemon juice
  • 1 1/2 c chicken broth
  • 2 T arrowroot
  • pepper to taste

Preparation

Step 1

Melt butter in large skillet Add onions, garlic, mushrooms and saute for 2 minutes. Add chicken, brown lightly on both sides. Add dash of salt/pepper and chicken broth-simmer 30 minutes. Combine lemon juice and arrowroot, pour over chicken, Increase heat slightly, simmer for another 10-12 minuntes until sauce thickens
