- 8 broiler-fryer chicken drumsticks, skin removed
- 1/2 c low-sodium soy sauce
- 2 T apple cider vinegar
- 1 t prepared mustard
- 1/4 t pepper

Step 1
Stir soy sauce and vinegar into mustard. Place chicken in a large plastic refrigerator bag or bowl; add marinade, turning to coat. Secure bag well or cover bowl. Marinate in refrigerator for at least 1 hour. Distribute chicken on broiler pan in a single layer; sprinkle with pepper. Arrange oven rack so chicken is about 6" from heat. Broil at 425 for about 30 minutes or until fork can be inserted in chicken with ease. Turn and baste every 10 minutes while cooking. Remove chicken from pan; reserve drippings. Skim off excess fat from drippings and serve hot with chicken.
