Ingredients
- 2 lbs. boneless chicken breasts
- 1 10 oz. can diced tomatoes with green chilies
- 1 red, orange and green bell pepper
- 1 yellow onion, diced
- 4 cloves garlic, minced
- 2 t chili powder
- 2 t ground cumin
- 1 t paprika
- 1 t salt
- 1/2 t black pepper
- 2 T fresh lime juice
- 1 T honey
- serve with
- flour tortillas
- sour cream
- salsa
- shredded lettuce
- avocado
- cheese

Preparation
Step 1
Pour 1/2 the tomatoes in bottom of crock pot. Top with 1/2 the peppers and onions. Top with chicken.
Sprinkle chili powder, cumin, paprika, salt and pepper. Top with remaining peppers and onions.
Cover and cook on low for 6-8 hours or high 3-4 hours. Remove chicken and shred.
In a small bowl, whisk lime juice and honey. Add to crock pot and stir.
