Ingredients

  • 1 pkg. (6.9 oz.) Rice-A-Roni Chicken Flavor or 1/3 less Sale Chicken
  • 2 T butter or margarine
  • 2 1/2 c water
  • 1 can (10 oz.) chunk chicken, drained
  • 2 c chopped broccoli flowerets
  • 1 can (15 oz.) diced tomatoes, drained or 2 medium tomatoes, chopped
  • 1 T minced fresh basil or 1 t dried basil
  • 1 c (4 oz.) shredded mozzarella cheese (optional)

Step 1

In large skillet, saute rice-vermicelli in margarine until golden brown over medium heat. Stir in water and special seasonings; bring to a boil over high heat. Cover; reduce heat to low. Simmer 10 minutes. stir in broccoli, chicken, tomato and basil. Cover, simmer 5-10 more minutes or until most of liquid is absorbed. Sprinkle with cheese, if desired.
