chili pie with cornbread topping
- 1 lb ground round beef
- 2 medium onions chopped (1 cup)
- 1 can tomato sauce (15 ounces)
- 2 medium size green peppers coarsely chopped
- 1 cup canned drained corn or 1 cup frozen corn
- 1-2 TBS chili powder
- 1 1/4 tsp salt
- 1 tsp pepper
- 2 eggs
- 1 TBS vegetable shortening
- 1/2 cup buttermilk
- 3/4 cup cornmeal
- 1 TBS all purpose flour
- 1 tsp baking soda
Preheat oven to 350
Brown beef and onions in dutch oven breaking up meat with wooden spoon, until meat is no longer pink. Stir in tomato sauce, green pepper, corn, chili powder, salt and pepper. Bring to boiling; lower heat; cover an simmer 15 mn.
Pour meat mixture into ungreased 10 inch deep pie plate
Beat together eggs, shortening and butter milk in a small bowl for 1 mn. Beat in cornmeal, flour, baking soda and remaining 1/4 salt just until well blended. Spoon over the meat and spread evenly to cover entire surface.
Bake in preheated oven for twenty minutes or until wooden pick comes out clean.
