Pasta Con Sarde ( Pasta with Sardines)

Ingredients

  • 1 lb. spaghetti
  • 3/4 c olive oil divided
  • 6 cloves garlic
  • 2- 4oz. cans sardines packed in oil
  • 1 c seasoned breadcrumbs
  • 1/3 c grated cheese ( parmesan or romano)
  • 1/4 c chopped parsley
  • 1 tsp. black pepper
  • crushed tomatoes
  • raisins
  • pignolli nuts (pine nuts) lightly toasted

Preparation

Step 1

Cook pasta al dente. Toss with 1/4 c olive oil and set aside. Saute garlic with remaining oil, add sardines and cook for a few minutes. Add some crushed tomatoes, raisins and pignolli nuts. Raisins and pignolli nuts are as many as you want. Stir in parsley and pepper. Cook for about 1/2 hour. In medium frying pan lightly brown extra breadcrumbs mixed with Italian cheese. Mix sauce with pasta and top with breadcrumb mixture. Top with more grated Italian cheese
