Potato Kale Breakfast Hash

Ingredients

  • 5 c frozen, shredded hash browns
  • 2 shallots, thinly sliced
  • 4 cloves garlic, minced
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 3 c frozen kale, chopped
  • 4 eggs
  • olive oil
  • cherry tomatoes (side garnish opt)

Preparation

Step 1

Preheat to 400.

Mix hash brown, shallots, garlic, paprika, s & 2, 2-3 tbsp olive in large bowl. Spread mixture evenly on baking sheet and roast 10 minutes.

Remove from oven. Layer kale onto hash browns evenly, roast for an additional 5 minutes.

Remove from oven. Stir kale and hash brown together. Roast addtl 5 minutes or until kale is tender and hash browns are browned.

Heat 1 tbsp olive oil over med-low heat. Crack eggs into pan and cook til desired.

Spoon kale mixture on plate and top with fried eggs and cherry tomatoes, halved on the side for garnish.
