Ingredients

  • 1 T EVOO
  • 1 onion, chopped
  • 3 cloves garlic minced
  • 1/2 green bell pepper, diced
  • 1/2 red bell pepper, diced (can substitute roasted red pepper or chopped pimentos)
  • 3/4 c uncooked white rice
  • 1 1/2 c low sodium vegetable or chicken broth
  • 1 t ground cumin
  • 1/4 t cayenne pepper (more to taste)
  • 2 T white vinegar
  • 1 t dried oregano or 1 heaping T chopped fresh oregano
  • Salt & pepper to taste
  • 3 1/2 c (3 cans) black beans, drained

Preparation

Step 1

In stockpot over med high heat, heat oil. Add onion, peppers & garlic. Sauté 4 min. Add rice & sauté 2 min.

Add broth, bring to boil, cover & lower the heat. Cook for 20 min. Add the spices and black beans. Heat with the beans & spices.
