Ingredients
- 2 teaspoons olive oil or butter
- 1/2 cup chopped onions
- 5 large eggs
- 1/2 cup almond milk, rice milk or milk of your choice
- 1/4 teaspoon salt
- 1 1/2 cups chopped cauliflower
- 1/2 cup shredded low-fat cheddar cheese
- 1 teaspoon paprika

Preparation
Step 1
1) Preheat oven to 375°F.
2) Lightly grease an 8-by-8-inch casserole dish or 9-inch pie pan with olive oil or butter.
3)Spread onions evenly in the dish and place in the oven.
4) In a small bowl, beat eggs, milk, salt (optional) with a whisk.
5) Remove dish with oven mitts and spread cauliflower and cheese evenly.
6) Pour egg mixture over cauliflower.
7) Sprinkle with paprika then cheese.
8) Bake for 30 minutes, until cooked and casserole is golden brown and cauliflower is soft.
