Hearty Winter Soup with Chorizo

Ingredients
- 1 T oil
- 2 c diced cooked chorizo sausage
- 1 c chopped onion
- 3 cloves garlic, chopped
- 1/2 t chili powder
- 1/2 t ground cumin
- 1/2 c chopped carrot
- 1/2 c chopped celery
- 6 c chopped kale
- 4 c chicken broth
- 1 can 796ml diced tomatoes
- 1 can 540ml chick peas rinsed and drained
- 2 c water
- 1/2 c pearl barley
- 1/2 t ground ppper
- 1/4 t salt

Step 1
Heat oil in a dutch oven over med heat. Add sausage and cook, stirring frequently, until browned, about 5 minutes. Transfer to a paper towel lined plate.
Drain off all but 1T fat from pan. Add onion and saute until softened. Add garlic, chili powder, and cumin; cook, stirring for 1 minute. Add carrot and celery; cook stiring frequently for 5 minutes.
Return sausage to pan. Stir in remaining ingredients. Bring to a boil. Reduce heat and simmer, covered, stirring occasionally for 30 to 35 minutes or until barley is tender.
