Robin Fox Chicken Casserole

Ingredients

  • 1 can cream of chicken soup
  • 1 1/3 cup water
  • 2/4 cup uncooked regular long grain white rice
  • 2 cups fresh broccoli, chopped
  • 1/3 cup italian bread crumbs
  • 1/2 tsp onion powder
  • salt and pepper to taste
  • 4 skinless large boneless chicken breasts (or 6 smaller ones)
  • 1/2 cup mozzarella cheese (or cheddar cheese)

Preparation

Step 1

Preheat oven to 375 degrees
Stir the soup, water, rice, broccoli and onion powder in 9x13 baking dish
Place the chicken on top and season with salt and pepper, Sprinkle the bread crumbs on the top of the chicken and rice, cover with foil.

Bake at 375 degrees for 45 mins or until done. Top with cheese, cover again with the foil. Place it on the counter top for 5 minutes to allow the cheese to melt.
