Ingredients

  • 2 . South of Mexico Chicken

Preparation

Step 1

France
Add diced shallot to the pan, saute in the fond. Deglaze the pan with white wine, reduce by 1/2. Add goat cheese, dill and whole grain mustard to pan sauce. Serve over wide egg noodles.

Mexico
Add sliced jalapenos and onions to the pan, saute in the fond. Deglaze the pan with tequila or Margarita mix, reduce by 1/2. Season with cumin, coriander, cilantro, cayenne pepper. Serve with refried beans and rice.

Rome
Add diced onion and garlic to the pan, saute in the fond. Deglaze the pan with red wine, reduce by 1/2. Thicken sauce with tomato paste, add basil and oregano. Serve over pasta.

Honolulu
Add diced ginger and shredded coconut to the pan, saute in the fond. Deglaze the pan with pineapple juice, reduce by 1/2. Thicken sauce with cornstarch slurry, add pineapple chunks. Serve over sticky sushi rice.

Hong Kong
Add julienne or onion, green and red pepper, ginger to the pan, saute in fond. Deglaze the pan with plum wine or soy sauce, reduce by 1/2. Thicken sauce with cornstarch slurry, add sugar snap peas. Serve over brown rice.

Greece
Sliced olives, feta cheese, and sambuca.

Thailand
Ginger, coconut milk and peanut butter.
