Ingredients
- 4 large very ripe bananas
- 1/2 C unsalted butter
- 3/4 C light brown sugar
- 2 large eggs, room temperature
- 2 t vanilla extract
- 1/4 C buttermilk, room temperature
- 2 C A/P flour, sifted
- 3/4 t baking soda
- 1/2 t salt
- 1/2 C chopped walnuts
Preparation
Step 1
preheat oven 350, place bananas w peal on sheet pan. bake 15 mins, cool, completely.
Heat butter in small saucepan 2-4 minutes until brown, set aside.
Grease and flour 9x5 loaf pan, set aside
In large mix bowl cream butter and sugar for 2 minutes, add eggs one at a time, mixing well, add vanilla.
scrape bananas out of peel into blender and pulse until purée
pour bananas into butter mixture and beat well., add butter mild, mix well.
in medium bowl combine flour, baking soda and salt. whisk until combined.
mix dry into wet mixture, stir just until flour is incorporated, taking care not to over work. stir n walnuts.
transfer to pan and bake 45-65 mins until toothpick comes t with a few dry crumbs.
