Seafood Lasagna

A great lasagna made with seafood and you can use the fish of your choice.
Ingredients
- 1 lb haddock, flaked
- 4 oz shrimp
- 4 oz fillet of sole, sliced
- juice of 1 lemon
- 4 T butter
- 3 leeks, very thinly sliced
- scant 1/3 c flour
- 2 1/2 about 2 1/2 c milk\
- 2 T clear honey
- 1 3/4 c mozzarella cheese
- 1 lb precooked lasagna
- 1/2 c Parmesan cheese
- pepper
Preparation
Step 1
Put the haddock, shrimp, and sole into a large bowl and season with pepper and lemon juice according to taste. Set aside while you make the sauce.
Melt the butter in a large pan. Add the leeks and cook, stirring occasionally for 8 minutes. Add the flour and cook, stirring constantly for 1 minute. Gradually stir in enough milk to make a thick creamy sauce. Blend in the honey and mozarella cheese and cook for an additional 3 minutes. Remove the pan for heat and mix in the fish and shrimp. Make alternate layers of fish sauce and lasagna noodles, finishing with a layer of fish sauce on top. Generously sprinkle over the grated Parmesan cheese and bake in a preheated oven for 350 for 30 minutes.
