- 1 1 1 cup dried fruit
- 1 1 1 cup (12-15 whole) pitted dried dates, preferably Medjool
- Equipment
- Food processor
- Plastic wrap or wax paper
- Sharp knife
- Instructions
- to to nuts, dried fruit, and dates in a food processor. Combine all the ingredients in a food processor. Pulse a few times just to break them up. Separate the dates if they start to clump together.
- 30 to for 30 seconds. By this point, the ingredients should all have broken down into crumb-sized pieces. Scrape the edges of the bowl and beneath the blade to make sure nothing is sticking.

- 30 30 30 grams unsalted cashews (1/4c)
- 80 80 2/3c grams dates, which is a scant 2/3c (I use SunMaid, as they’re softer.)
- tiny pinch salt (brings out the sweetness)
- 1/8 a drop or two of good-quality vanilla extract (I use about 1/8 tsp)
- Blend in your food processor (I use the Magic Bullet short cup. If you’re using a bigger food processor than that, I’d recommend at least doubling the homemade larabar recipe for smoother blending). Enjoy

Ingredients
1 1/2 cups roasted cashews halves and pieces
1 cup chopped dates*
1 teaspoon vanilla extract
1/4 teaspoon sea salt optional if your cashews aren’t salted
Instructions
Place cashews, chopped dates, vanilla, and sea salt into food processor.
Process until the mixture can easily be formed into balls.
Form into 12-15 little bites using a tablespoon or small cookie scoop.
Optional - melt dark chocolate in a microwave safe bowl with a touch of coconut oil.
Dip the bites into the dark chocolate and sprinkle with more sea salt, to taste.
Store in a sealed airtight container in the fridge.

30 pitted medjool dates (approx 1 1/2 cups)
1.5 cups raw cashews
pinch of salt
optional: homemade dairy-free chocolate chips
Instructions
Place 30 pitted medjool dates in a small food processor. Process until dates form a paste.
Next, add in raw cashews and pulse until the cashews are coarsely chopped and mixed in with your dates. You may need to stop and scrape the sides a few times. At this point you are able to pulse in optional chocolate chips. Just make sure you don't over mix and crush the chocolate!
Form a ball with your dough, then using a rolling pin, roll out dough so that it's about 1.5 inches thick. Slice into bars with a knife.

What I usually do with homemade Larabars is store them in the freezer. I actually do this with most of the treats I make like my Grain-Free Protein Peanut Butter Cookies and Brownie Cookie Dough Swirl Protein Balls because they last longer this way.
Plus I actually think they taste good frozen. Is that weird?
