These bars are a delight. They are super chewy, loaded with peanut butter flavor and an immense amount of chocolate. The top has an amazing flaky texture that really adds to the quality of the bar. They are actually best a few hours after being baked and stay soft and chewy for days and days after they are made. As an added bonus, you only need 1 large mixing bowl and a wooden spoon to make them happen. (No mixer or multiple bowls needed!)

Ingredients

  • 1 C butter
  • 2/3 C peanut butter
  • 2 C brown sugar
  • 2 eggs
  • 2 tsp vanilla
  • 2 C flour
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 2 C milk or semi sweet chocolate chips

Preparation

Step 1

1. Preheat your oven to 325 degrees.
2. Into a large mixing bowl place 1 C butter. Melt in the microwave.
3. Add 2/3 C peanut butter (I used chunky).
4. Add 2 C brown sugar and stir it well.
5. Add 2 eggs and 2 tsp vanilla and stir to combine.
6. Add 2 C flour. Sprinkle over the top of the flour 1/4 tsp baking soda and 1/2 tsp salt. Carefully toss the dry ingredients together, then stir everything together.
7. Add 2 C milk or semi sweet chocolate chips and stir to combine.
8. Spray a 9x13 pan with cooking spray and spread the dough inside.
9. Bake for 25-30 minutes, or until the center is set.
10. Allow the pan to rest on the counter for 20-30 minutes, then use a sharp knife to slice into bars. Please note that these bars appear to be a little bit underdone when they are first sliced. However, once cooled (and even after a few hours) the texture firms up and results in a bar that stays moist and delicious for days and days.

Yield: 16 large bars or 32 small bars
