Lemon artichoke chicken (contest recipe)

Ingredients

  • 4 chicken breasts
  • 6 Tbl flour, divided
  • 1 tsp black pepper
  • 1/2 cup butter
  • 1/2 cup green onions
  • 2 cups chicken broth
  • 1/4 cup dry white wine
  • 1/4 cup lemon juice
  • 1 can quartered artichokes
  • 1 tsp salt
  • 1/4 cup capers
  • 1/4 cup chopped parsley

Preparation

Step 1

Combine 4 tbl flour and pepper. Dredge chicken in mixture.

In skillet, over high heat, melt 1/4 cup butter. Add onions until softened. Add chicken to pan. Remove chicken when golden brown on both sides.

Add stock and wine to pan stirring to scrape bits off bottom. Bring mixture to boil and cook until reduced by half.

In small bowl, knead 2 tbl of flour and 1/4 cup butter. Whisk into sauce and stir until thickened. Stir in lemon juice and artichokes.

Add chicken, cook covered for 7 min.
Add parsley
