If you love you some S'mores you'll love this S’mores Pudding recipe.
- 2 (14-ounce) cans full fat coconut milk, unsweetened
- 1 tablespoon plus 1 teaspoon unsweetened cocoa powder, divided
- Vanilla stevia drops or your favorite sweetener, to taste
- 7 sheets Erewhon organic honey graham crackers
- Chocolate chips

Chill coconut milk in the fridge overnight. Carefully open without shaking. Pour out the coconut water. Whip coconut milk in a stand mixer or with a hand mixer until creamy and thick. Sweeten with vanilla stevia drops or your favorite sweetener. Divide the cream in half. Flavor half with the cocoa powder, chocolate. Keep the other half white, vanilla.
Pulse 6 of the graham crackers in the food processor until you get a fine crumb.
Layer in parfait glasses. Alternate layers of the graham cracker crumbs with the chocolate and vanilla coconut cream. Top with chocolate chips and pieces of graham crackers.
