Ingredients
- 2 lbs. ripe tomatoes (about 3 medium)
- 3/4 C of sweet onion (no need to chop)
- 1/4 C of red onion
- 1/2 green pepper (cut in half again)
- 1/4 C packed cilantro
- 1-2 cloves garlic
- 1 jalapeno (more or less to taste)
- juice of 1 lime
- 1/2 t. cumin
- 1 t salt
- 1 t sugar (depending on tomatoe sweetness)
Preparation
Step 1
Add all ingredients (EXCEPT the red onion, half of the green pepper, and half of the tomato) to a food processor and puree.
Dice the remaining tomato, onion, and pepper (for texture)
Combine the puree and the diced ingredients and refrigerate for about an hour.
Serve chilled w/ tortilla chips
(Note: it is more time-consuming, but it makes for better salsa, if you blanch, peel and de-seed the tomatoes before pureeing)
