Oatmeal Pancakes

this recipe can be halved and will make 6 pancakes or 2 servings

Ingredients

  • Optional:
  • 2 cups oatmeal - uncooked (not instant)
  • 2 cups buttermilk
  • 1/2 cup all purpose flour
  • 2 tbs sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 eggs, lightly beaten
  • 1/2 stick unsalted butter, melted
  • 1 tsp vanilla
  • diced bananas, walnuts
  • or blueberries

Preparation

Step 1

In large mixing bowl stir together oatmeal and buttermilk until well blended. Cover and refrigerate - either overnight or an hour before making pancakes.

In small bowl whisk together flour, sugar, baking powder, and soda. Stir into oatmeal mixture. Stir in eggs, melted butter and vanilla.

Batter should drop easily from a spoon (if too thick add a little more buttermilk). Heat griddle over medium low heat and cook on greased griddle until bubbly. Flip and brown on other side.

If you wish you can add any of optional ingredients to batter before cooking.

These pancakes are on the wet side inside. If you want them dryer cook on lower heat for a longer time being careful not to burn them.
