Ingredients

  • Dressing:
  • 1 Tbsp red wine vinegar
  • 2 tsp fresh lemon juice
  • 1 clove of garlic, pressed
  • 1/2 tsp salt
  • 1/2 tsp dried oregano
  • Pinch of cinnamon
  • 1/4 tsp ground pepper
  • 1/4 c olive oil
  • Salad:
  • 1 large head romaine lettuce, cut into bite-size pieces
  • 1 pound feta cheese, crumbled
  • 1 medium cucumber, diced
  • 2-1/2 cups cherry tomatoes
  • 4 oz. black Greek olives
  • 4 oz. green Greek olives
  • 1 small green pepper, chopped
  • 1 avocado, sliced
  • 1 red onion, sliced
  • salt & pepper to taste

Preparation

Step 1

Dressing:
Combine all ingredients in jar with tight fitting lid; shake to mix thoroughly.

Salad:
1. Place lettuce in salad bowl. Season with small amount of dressing.
2. Mound cheese in center of lettuce.
3. Arrange remaining ingredients attractively around edge of bowl.
4. Just before serving, pour dressing over salad. Toss and serve.
