Italian chopped salad

Ingredients

  • Dressing:
  • 1/2 cup olive oil
  • 1/2 cup red wine vinegar
  • 2 T. honey
  • 1 T. Dijon mustard
  • 1 t. Italian seasoning
  • 2 cloves garlic, minced
  • Salt & pepper to taste
  • Salad:
  • Chopped romaine lettuce
  • Grape tomatoes, halted
  • Green onions, chopped
  • Cucumbers
  • 1 jar artichoke hearts, drained and chopped
  • Pepperoni
  • 1 can olives or green olives chopped
  • Cubed mozzarella
  • Grated parmesan
  • Cubed salami and/ or mini pepperoni
  • Ditalini pasta
  • Grilled or cooked chicken

Preparation

Step 1

For dressing, combine all ingredients except oil. Slowly drizzle oil in while whisking other ingredients. Refrigerate until ready to use. Whisk again just prior to use.

For salad, chop all ingredients as you like. Cube the cheese. Once pasta is cooked, drain and rinse in cold water. Ensure entirely cold before adding to salad. Chicken to be cut into bite size pieces.
