Step 1
Before you begin, make sure you use a skillet with a lid. This is the key in getting your potatoes nice and soft without browning them too much.
In a large skillet, melted butter over medium-low heat. Add potatoes. Sprinkle potatoes with garlic salt and oregano. (Adjust the seasonings to your families likings.) Put the lid on the skillet and keep over medium-low heat.
Turn the potatoes every 3-5 minutes, until they reach your desired tenderness. I like them on the softer side, so I let them cook for 15-20 minutes.
Once the potatoes are done the way you like them, remove the skillet from heat and sprinkle with cheese. Put the lid back on and let sit another 5 minutes or so - until the cheese is nice and melted. Serve and Enjoy!
