Ingredients
- 5 pounds boneless beef chuck, cut into 2 inch cubes
- 6 cups red burgundy wine
- 5 medium yellow onions :1 quartered and 4 chopped
- 3 T olive oil
- 2 bay leaves
- 1 tsp crushed black peppercorns
- 1 sprig fresh thyme
- 9 slices lean bacon, cut into small cubes
- 3 garlic cloves, chopped
- 2 T flour
- 3 large carrots, sliced
- 20 pearl onions, peeled
- 1 T sweet paprika
- 1 t freshly ground allspice
- 2 1/2 cups button mushrooms...about 8 ounces
- 2 T unsalted butter
- salt and pepper taste
- fresh parsley, chopped, for garnish
