Ingredients

  • 5 pounds boneless beef chuck, cut into 2 inch cubes
  • 6 cups red burgundy wine
  • 5 medium yellow onions :1 quartered and 4 chopped
  • 3 T olive oil
  • 2 bay leaves
  • 1 tsp crushed black peppercorns
  • 1 sprig fresh thyme
  • 9 slices lean bacon, cut into small cubes
  • 3 garlic cloves, chopped
  • 2 T flour
  • 3 large carrots, sliced
  • 20 pearl onions, peeled
  • 1 T sweet paprika
  • 1 t freshly ground allspice
  • 2 1/2 cups button mushrooms...about 8 ounces
  • 2 T unsalted butter
  • salt and pepper taste
  • fresh parsley, chopped, for garnish
