Parmesan Catfish

Parmesan Catfish is the oven-baked, crispy catfish dish that you're craving in your meal rotation. This dish pairs perfectly with a lightly dressed side salad, roasted vegetables, or mashed potatoes. This recipe can also make a great sandwich, just smear good toasty bread with tartar sauce, top with butter lettuce and tomatoes for a great lunch anytime.
Ingredients
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 3 tablespoons cornmeal
- 1 teaspoon paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 egg white
- 1/4 cup fat-free milk
- 4 (6-ounce) catfish fillets

Step 1
In a shallow dish, combine the flour, cheese, cornmeal, paprika, salt, and black pepper; set aside. In another shallow dish, beat egg white and milk. Dip fillets in milk mixture, then in flour mixture.
Place in a 13x9-inch baking dish coated with cooking spray. Bake, uncovered, at 350°F for 35 to 40 minutes or until fish flakes easily with a fork.
