New York Steaks w/Avocado Sauce

Ingredients
- Avocado Butter:
- 2 1-inch think bone-in New York Strip Steaks
- 2 tablespoons extra virgin olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon coarsely ground black pepper
- 2 ounces sweet cream butter, softened
- 1 avocado, mashed
- 1 clove garlic, minced
- 2 tablespoons chives or green onions, minced
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon white pepper

Step 1
To make avocado butter, thoroughly mix butter, avocado, garlic, chives, lemon juice and white pepper. Using a piece of parchment paper, roll into a cylinder shape. Place in freezer for 15 minutes.
Season steaks with olive oil, salt and pepper. Let rest 15 minutes at room temperature.
Preheat cast iron pan over medium-high heat. Place steaks in skillet and cook for 4-5 minutes. Flip and continue cooking 5-6 minutes or until internal temperature of 130°F is reached for medium rare. Remove from heat, top with avocado butter. Tent loosely with aluminum foil and let rest for 5 minutes. Serve.
