Southwestern Pasta Casserole

Ingredients

  • 1 12 1 12 1 12 Oz Box of Ziti Pasta
  • 1 15 1 15 1 15 Oz Can of Chill with No Beans
  • 1 10 1 10 1 10 Oz Can of mild enchilda sauce
  • 1 4.5 1 4.5 1 4.5 Oz Can of chopped green chiles
  • 1/4 1/4 1 1/2 of fresh cilantro chopped (or about 1 1/2 tablespoons of dried cilanto leaves
  • 1 1/4 1 1/4 1/4 Cups of Mexican Cheese

Preparation

Step 1

Preheat oven to 350 derees; coat 2 1/4 Quart baking dish with cooking spray. Cook pasta according to directions and drain. Meanwhile in a large bowl, mix chili, enchilda sauce,green chilies and cilantro. Stir in 1/2 cup of the cheese than stir in the drained pasta and mix until well covered.

Bake 45 minutes or until hot in center. Remove the foil. Sprinkle with remaining cheese; bake five minutes or until cheese is melted and lightly browned. Let cool for ten minutes before serving.

If desired garnish with sour cream and a cilantro sprig.
