Butterscotch Banana Muffins

Ingredients
- 1 white cake mix (15.25 oz)
- 1/2 cup buttermilk
- 1/2 cup butter, softened
- 2 eggs
- 1 1/4 cups smashed banana
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 cup butterscotch chips
- Crumb Topping (optional)
- 1/4 cup brown sugar
- 1/4 cup sugar
- 1/2 cup flour
- 1 teaspoon cinnamon
- 1/4 cup cold butter
Preparation
Step 1
Combine the sugars, flour, and cinnamon from the topping. Cut the butter in until it resembles sand. Set aside.
In a large mixing bowl, beat the cake mix, buttermilk, butter, and eggs on low until combined. Add the banana, cinnamon, and nutmeg and beat on low for 1 minute. Divide the batter in 20 cupcake liners. Top with a heaping spoonful of crumb topping. Bake at 350* for 24 minutes. Store in a sealed container on the counter for 3-4 days.
